This rice or chapati side dish can be prepared in just 15 minutes and tastes delicious.

Ingredients for roasting:

Coconut oil - 1 tsp
Methi seeds (optional) - 1/4th to 1/2 tsp
Mustard seeds - 1/2 tsp
Dry coconut - 4 tbsp
Red chili - 3

Other ingredients

Sweet potatoes - 1
Salt - 2 tsp
Milk - 1/2 cup
Water - 3/4th cup
Yogurt / curd - 4 tbsp
Curry leaves - 4 to 5
Urad dal (lentils) - 1/4th tsp
Chana dal - 1/4th tsp
Hing - 1/4th tsp

Preparation:

Step 1: Thoroughly wash sweet potato, peel and chop it into big random chunks enough to immerse in the water while boiling.

Step 2: In an instant pot or pressure cooker boil it for 15 minutes or 3 whistles (in pressure cooker). Once cooked transfer it to a mixing bowl and mash until the texture is like a thick paste.

Step 3: Meanwhile, in a pan on a medium heat roast the above mentioned ingredients under the ingredients to be roasted section. Let it cool completely.

Step 4: After mashing the potato add a tsp of salt, hot milk and mix well.

Step 5: In a blender or a mixer grinder put all the ingredients and make a smooth paste (adding freshly grated coconut is optional for grinding)

Step 6: Add this paste to the mixing bowl and add cord / yoghurt. Mix everything until they’re combined well. Add more salt if needed.

Step 7: In a tempering pan add coconut oil, mustard seeds, lentils, curry leaves, and hing. Once the mustard starts spluttering and lentils turn golden brown turn off the heat. Pour this on the creamy potato, mix well and serve hot with rice or chapati.
