Ingredients
Pork knuckle 1kg
Mushroom 6pcs.(Best use flower mushroom)
7-8 pcs shallots
3-4 cloves garlic
2 tbsp fermented bean paste
1 tbsp dark soy sauce
3 tsp sugar
4-5 tbsp cooking oil
salt to taste.*Optional* I don't put salt in my
video cause i feel my fermented bean paste i
use is salty enough.

Method
Wash pork knuckle & drain dry.
Soak mushroom with hot water till soften. Wash them & cut the stem off.
Chop garlic & slice the shallots.
Heat up oil in pan or wok, fry shallots then put in garlic & mushroom together as garlic burns very fast. After a few stir put fermented bean paste stir fry then put in pork knuckle.
Stir fry.Put dark soy sauce. Stir fry until ingredient balance up then pour hot water to cover pork. Add sugar. When water starts boiling up turn the heat to very low to stew the pork for at least 2 hrs. Make sure cover the lid*** If the water evaporate & you feel the pork & mushroom not tender enough, add abit hot water & continue to stew a while more.
