Serves: 6

Ingredients:
500g dried macaroni, cooked al-dente and chilled
35g plain flour
35g butter
1-pint milk
150g strong cheddar cheese grated
100g comte cheese grated
3 tbsp mascarpone cheese
50g parmesan
1 balls of buffalo mozzarella diced
2 tbsp English mustard
2 tbsp truffle or porcini paste
50g panko breadcrumbs
100g fresh grated Parmesan
1tsp cayenne pepper

Method:
- In a pan, bring the milk, bay leaves and rosemary up to the boil.
- Remove from the heat.
- In a separate pan, melt the butter.
- Add the flour.
- Stir and cook out for 3-4 minutes, slowly add the milk, bit by bit and whisk until smooth and you have a great roux sauce.
- Add the, grated cheddar and the comte, parmesan and mascarpone cheese.
- Stir until the cheese has melted. Season.
- Mix the macaroni and truffle paste into the cheese sauce.
- Stir in the diced mozzarella and pour the mix into a pie dish.
- Mix together the breadcrumbs, Parmesan and cayenne.
- Sprinkle the breadcrumbs mix over the top.
- Place into a pre-heated oven at 200c and bake for 20-25 minutes until browned and bubbling.
- Serve and enjoy!
