Almond & Cranberry Biscotti is so simple to make & they are packed with flavour. Biscotti's are also known as Cantucci & are basically Italian cookies (biscuits) which originated in Prato.

Biscotti's are very forgiving treats that can be customized according to your favourite add-in's. If you do not have almonds or cranberry's, simply make them plain.

Ingredients:
* 60 grams butter or margarine
* ¾ cups white granulated sugar
* 2 eggs
* 2 ½ tablespoons vegetable oil
* ¼ teaspoon almond essence
* ¼ teaspoon vanilla essence
* ¼ teaspoon salt
* 1 teaspoon baking powder
* ¼ teaspoon bicarbonate of soda
* 2 cups all-purpose or cake flour
* ½ cup dried cranberries
* ¾ cups whole almonds

Method:
* In a mixing bowl, cream together the butter/margarine & sugar.
* Add in the eggs, vegetable oil, almond essence & vanilla essence. Mix well.
* Add the salt, baking powder, bicarbonate of soda & 1 ½ cups flour. Fold together to form a sticky dough.
* Place onto a floured surface & use the remaining ½ cup flour to combine the dough, making it smooth & not sticky.
* Divide the dough into 2 equal parts & place onto a lined baking sheet.
* Shape each portion into a log & flatten the tops slightly with your fingers.
* Bake in a preheated oven at 30-35 minutes at 160° Celsius.
* Allow to cool on a cooling rack for 15 minutes - this step is crucial as if you don’t allow it to cool, they will break when slicing them.
* Once cooled, cut the logs in an angle.
* Place each slice onto a baking sheet & bake for 5 minutes, thereafter, flip them over & bake for another 5 minutes.
