Traditionally made with potatoes and fish. In this recipe I replaced the potatoes with cassava. So tasty and delicious..To same this delicious snack/appetizer you will need:
1 and 1/2 lbs of any fish of choice( I used tilapia filet)
1 and 1/2 lbs of cassava

To season fish:
1/4 tsp of old bay seasoning
1/4 tsp onion power
1/4 tsp garlic powder
1/8 tsp salt(use according to preference)
1/8 tsp black pepper
1 TBS olive oil

Seasonings needed to mix fish cake:
1/4 cup finely chopped sweet white onions
5 cloves finely minced garlic
1/4 of a red bell pepper
2 finely chopped weri weri peppers seeds taken out(optional)
1/4 cup chopped scallions
1 egg
1/4 cup of plain bread crumbs(optional)
1/4 tsp salt(Taste before adding )

Additional ingredients needed to assemble fish cake:
3/4 cup of flour
1 TBS bread crumbs
2 eggs beaten

Vegetable oil for frying.
