This Sauce Vierge is so tasty you could just eat it with bread on its own! It is so versatile you can use it with fish, meats and salads. I leave it up to you.

It is a very easy dressing made with the following -

Ingredients:-

85ml of good extra virgin olive oil
1 squeeze of fresh lemon
1 large tomato (made into concasse)
Seasoning
1/2 a garlic clove
4 large basil leaves

Mix all the ingredients together in a pan except the basil leaves which you will incorporate at the last minute. Just warm the mixture through and serve.

It is a great accompaniment to any grilled fish; a nice steak or with your BBQ food.

A quick tip; do not allow the mixture to boil as you will lose the flavour of the olive oil.

Et voila! Ready to be enjoyed.
