So...I don't know if this was already known about in some form or not, but apparently it's possible to get multiple boosts from a dash plate by rapidly entering and leaving its hitbox. This is usually (but not always) done by alternating between L and R to repeatedly strafe on and off the very edge of the dash plate (side attacks can't be mapped to LL/RR for this to work).

Most of the time it's only possible to get 2 boosts, but at low enough speeds (~1100km/h or lower depending on drift angle), it's just barely possible to use pretty much the full length of the dash plate and get 3 boosts, although this requires extreme precision to pull off.
Dash plates don't actually put the machine in a boosted state, but rather they grant an instant 128km/h speed boost, so there is a huge benefit from getting multiple boosts from the same dash plate...especially if there are more dash plates close by.

Night Thunder can make very good use of this trick because it is tied with several machines for having the lowest deceleration rate while traveling above its base top speed, meaning that NT can preserve enough speed in between the dash plates that it can easily stack up a lot of speed boosts, enabling it to not only reach speeds that are ludicrous by lap 1 standards, but also carry a disgustingly large portion of that speed into the start of lap 2.
Crazy Bear simply can't do any of this because it has pretty bad speed retention.

Night Thunder isn't without its downsides, though. Its base top speed is one of the lowest in the game (1092km/h VS Crazy Bear's impressive 1166km/h) and it isn't quite as good at drifting as CB, so the first half of lap 1 is not so great for NT as there's only 1 dash plate it can use to compensate for its noticeably worse performance compared to CB.
Still, NT more than makes up for its weaknesses and ultimately leaves CB (and my sanity) in the dust on this track.
