Ingredients: Kalen gi mathel

(1) Usoi Kangsu :

1)Usoi / fresh bamboo shoot ( finely chopped slices to be soaked in water for a minimum 3/4 hrs before cooking), 1 medium size
2) Dry white peas ( to be soaked in water overnight), 1 cup
3) Green Chillies, 8/9 pc
4) Dry Red Chillies 🌶️ , 11 /12 pc
5) Ngari / Dry fermented fish, 9/10 pc
6) Local herbs for garnishing: chives, Lemon basil ( Mayangton) , phakpai , Fish mint ( Toningkhok ), King chilli slices 3/4 pc
7) Dry roasted prawns 🍤 for topping ( coarsely pounded ), 1/3 cup

Preparation time : 8 - 10 minutes

(2) Ching Yensin Kangsoi Thongba :
Yensin, 200g
Hooker chives (maroi napakpi ), a handful
Onion ( chopped ), 1/2 medium
Ginger ( finely chopped ), 1/2 inch
Dry chilli flakes , 5 pc
Ngari , 3 /4 pc
Dry Rohu fish, 1 (small )
Water, 1 & 1/2 cup or as per requirement
Salt as per taste
Chopped coriander leaves , 1/2 cup

Cooking time : 10 to 12 minutes

(3) Chenggum Kanghou / Mushroom broccoli ( capsicum ) stir fry :
Button mushrooms , 3 packet (about 300g)
Broccoli , 2 (medium )
Red pepper / capsicum , 1 (medium )
Refined oil, 100 ml
Green chilli ( finely chopped) , 10/ 12 pc
Whole cumin ( jeera), 1/2 tsp
Cumin powder, 1/2 tsp
Chopped Chives, 1/2 cup
Chopped Onion slices , 1/2 ( medium )
Ginger ( ground ), 1 tsp
Garlic ( ground ), 1 tsp
Salt as per taste
Chopped Coriander leaves 🌿, 1/2 cup

Cooking time : 15 - 20 minutes

(4) Chamfut / boiled vegetables
Carrot, beans, cucumber
