魚頭米粉Fish Head Rice Noodles
材料 魚頭一個, 菜心, 粗米粉, 番茄, 薑, 蔥頭, 蒜頭, 紅蘿蔔, 青蔥, 甜菜脯Ingredients One fish head, choy sum, rice noodles, tomato, ginger, onion bulbs, garlic, carrot, shallot, Preserved Radish
魚頭方面, 叫店主幫你把魚頭切開幾份As for the fish head, ask the shopkeeper to cut the fish head to a few pieces
回家後檢查有沒有鱗片還在魚身Check to see if there are any scales still on the fish when you get home
如果有, 就要用刀把鱗片刮掉If there is, use a knife to scrape off the scales
用豆粉水把魚頭清洗乾淨Clean the fish head with soy flour water
然後用紙巾把魚頭抹乾Then dry the fish head with a paper towel
醃魚頭To marinate fish head
把青蔥拍扁, 然後切段Flatten the shallots and cut into pieces
加入薑蓉1湯匙, 紹興酒1湯匙Add 1 tablespoon minced ginger, 1 tablespoon Shaoxing wine
撈勻, 醃15-30分鐘Mix well, marinate for 15-30 minutes
其他材料方面Other ingredients

用少許油煎薑片Fry ginger slices with a little oil
聞到薑的香味, 加入 蒜頭, 蔥頭, 紅蘿蔔Smell ginger, add garlic, onion bulbs, carrot
炒勻後, 加入番茄, 甜菜脯After stir well, add tomato, Preserved Radish

把湯煮至沸騰Boil the soup

把湯煮至沸騰Boil the soup
加入紹興酒1湯匙Add 1 tablespoon Shaoxing wine
如你喜歡, 可以加入更多青蔥You can add more diced shallots if you like
