Namaste everyone🙏.
This is a simple and easy receipe with limited ingredients.
For noodles:
Fill a large pot with hot water and bring to rapid boil. Add 500gm of pasta/thukpa noodles and boil until tender yet firm to the bite (cook them to package instructions). If you are using thukpa noodles (drain, rinse, and drain again) and if pasta (save the water for broth). Set aside.

For soup:
While the pasta is cooking, heat 2 spoons of mustard oil in a large pot over medium-high heat. Add fenugreek and cumin seeds and fry until light brown. Add 600gm of buff meat fry until light golden brown. Add salt to taste, half teaspoon of turmeric, 3 full spoons of garlic and ginger paste, stir them well and cook until golden brown. Add one and half nicely chopped red onions, stir and cook until nice and golden brown, then add 3 finely chopped medium size vine tomatoes. Add pasta water or water and let it boil on medium heat until rapid boil.
For achar/ topping:
Finely chopped half medium size onion, two medium size vine tomato, 2 fresh chillies, 3 gloves of garlic and 5gm of ginger. Add half teaspoon of turmeric, salt to taste, 2 spoons of sesame oil, and one pinch of Sichuan pepper/ Timur, mix well. Cover the bowl with cling film and microwave for about 4 and half minutes. Mix again and squeeze one small lemon.
For garnish
Lemon, coriander, chilli.
