Blueberry Soufflé Pancakes
These pancakes are way easier than they look and barely need a few ingredients!🥞

To make:
1️⃣Make the batter-
• In a bowl, whisk three egg yolks, 45ml milk and vanilla extract until smooth.
• Sift 45g all purpose flour and 1/2 tsp baking powder.

2️⃣Whip the Meringue:
• In another bowl, whisk three egg whites to stiff peaks.
• Add 4 tbsp sugar and whisk again.

3️⃣Fold and add blueberries:
• Fold half the meringue into the yolk mixture.
• Now carefully fold the remaining meringue. (Don't over mix, keep the batter airy)
• Gently fold in blueberries.

4️⃣Cook the Pancakes:
• Preheat a non-stick pan over low heat and lightly grease with butter.
• Scoop batter on the pan, after a few seconds, scoop once more. Cook for 3-4 minutes then Flip.

5️⃣Assemble:
• Layer the pancakes, top with some whipped cream followed by a blueberry compote.
