Join Northwood & Ruislip United Synagogue and chef and cookery writer Denise Phillips for a Chanukah cooking demonstration as she shares a recipe for Za’atar Carrot Spiced Latkes!

Preparation time: 20 minutes
Cooking time: 20 minutes
Makes: 30 small or 20 large latkes

Ingredients:
350g carrots (peeled and coarsely grated)
150g potatoes (peeled and coarsely grated)
1 onion (peeled, roughly chopped and coarsely grated)
1 tablespoon corn flour
100g self raising flour
1 teaspoon baking powder
2 tablespoon za’atar powder
1 tablespoon harissa powder
1 teaspoon salt
1 egg
Chopped chives

Method:
1. Using the grater section to your food processor or by hand, coarsely grate the carrots, potatoes and onions.
2. Squeeze out any excess liquid with a clean tea cloth.
3. Transfer to a bowl, add the corn flour, SR flour, baking powder, za’atar, harissa powder, salt and egg.
4. Mix well so that the spices and evenly distributed.
5. Heat light olive oil/ rapeseed oil – fry on both sides about 3 minutes until golden.
Transfer to a rack to cool.
6. To reheat and to add a final crispness - transfer to a baking tray and bake for 10 minutes on 180C/ 350F/ Gas mark 4.
7. Serve with your apple sauce, yoghurt, sour cream or tahini dressing and garnish with chopped chives.
