This is another wonderful Spanish dish full of goodness and easy to make. This one is not batchable, as the rice will absorb the liquid if left. Like most Spanish dishes this is easily made vegan from the off or you can add meat should you want to.

The main ingredients you should always have on hand when cooking a Spanish dish are:
Onion, tomato, pepper and garlic.
With these four ingredients, you can make so many different dishes in Spain and all are really tasty.


For this dish you need a large pan as we will be adding lots of liquid to keep the stewy consistency.


The ingredients:
1 onion
1 bell pepper
2 tomatoes
garlic to taste. I used 4
2 cups whole grain rice
1 litre vegetable stock
water plenty of
salt and pepper to taste
paprika to taste
1/2 cup peas
1/2 carrot or courgette
1 tbsp nutritional yeast (optional)


The How To:
1. Sautee the onion, pepper and tomatoes adding garlic a little later. Sautee for at least 15 to 20 minutes to get them soft. Blend at this point if you chose to.
2. Add herbs of choice now and the carrot or courgette. Fry for a bit longer.
3. Add rice and stock. Simmer. keep adding water while rice cooks.
4. Add nutritional yeast and paprika and the peas. Salt and pepper to taste.
5. Once rice is cooked serve right away add cooked chickpeas too.
