This recipe probably needs some improvements but this is how we did it

We used 17% fat content mozzarella
1. Add cheese to hot water and stir until cheese melts and comes together
2. Pinch off the amount you need for the filling
3. With the filling cheese, mix it with slightly warmed heavy cream and mix together well breaking up the cheese until you get a creamy , chunky consistency
4. With the remaining cheese, break off pieces to the size of your desired burrata. We suggest that you don’t go too big.
5. Flatten the cheese into kind of like a thick dumpling wrapper and place your filling in the cheese wrapper ans gather all the edges and squeeze together and twist and pinch off the excess making sure the top in sealed
6. Place the burrata into cold water to set until you are ready to use it.
