Hey there!!

I want to share with you a realistic day full of healthy and nourishing eats for when I am having a super lazy Sunday but still want to feel and be healthy. Lately, I have been practicing intuitive eating while also paying full attention to my meals. I hope you feel inspired to take more time for your food, chew well, and experience more of the amazing flavors you put into your meal. I have noticed that I feel so much better when I do this.

Recipes

Breakfast Yogurt Bowl
-250 g oat yoghurt  (Alpro Plain with Oats) -blueberries, raspberries & 1/2 banana
-1 tbsp mixed goji berries and pumpkin seeds
-1 tbsp granola
-pinch of cinnamon

Lunch crackers:
-3 rye crackers
-1/4 avocado
-mixed olives
-100 g smoked tofu
-cherry tomatoes
-pepper and salt
+ a glass of ginger lemon kombucha

Dinner is my go-to stuffed zucchini & bell pepper boats:
Ingredients for 2 people:
-1 zucchini
-1 red bell pepper
-1 tbsp Italian herbs
-230 g marinated tempeh (see marinade below)
-handful of raw walnuts
-handful of green olives
-400 ml tomato sauce
-salt & pepper

Tempeh Marinade:
* 230 g Tempeh (equivalent to 1 block)
* 15 ml Sesame Oil
* 45 ml Soy Sauce
* 30 ml Maple Syrup
* 30 ml Rice Vinegar
* 3 cloves Garlic, minced
* 1/2 teaspoon Ground Ginger
Mix all the ingredients in a bowl, add tempeh and make sure it's fully coated. Let it marinate in the refrigerator for at least 30 minutes before cooking. Enjoy!
