If you want to take something simple like tomato sauce and take it to the next level, you MUST try this one! This recipe and technique was inspired by a slow-cooked tomato sauce recipe on Serious Eats:

The ingredients I used are as follows:

4 28oz cans San Marzano Tomatoes
1/4 cup extra virgin olive oil
1/4 cup butter
8 cloves minced garlic
1 teaspoon red pepper flakes (use less if you like a little less punch)
1 tablespoon dried oregano
1 medium carrot, cut into chunks
1 medium onion split in half
1 large stem of fresh basil (or 1 to 2 tsp dried basil)
Salt and pepper to taste
1 tablespoon of fish sauce
1/2 cup freshly chopped parsley

Dump your tomatoes into a mixing bowl. Crush them by hand. Reserve 3 cups of the tomatoes and refrigerate.

Heat a dutch oven on the stove. Add butter and olive oil. When the oil is hot add the garlic and saute for about 2 minutes until fragrant. Add the red pepper flakes and the oregano and sautee for another minute. Add the tomatoes, onion, carrot, basil, small amount of salt and pepper and stir to combine. Bring to a slow simmer.

Move the dutch oven to the grill and leave the lid cracked open. Stir about once an hour until the sauce is reduce by about half. This will take 5 to 6 hours.

After the reduction, add your reserved tomato sauce, parsley, and fish sauce (optional). Add salt to taste.
