電飯煲鳳爪排骨飯

材料:
鳳爪(炸)7隻
急凍排骨10粒(約半斤)
豆豉15粒
辣椒仔1隻
蒜頭4粒
米2膠嘜

處理:
1. 鳳爪,清水解凍。
2. 排骨,清水解凍。
3. 排骨解凍後,倒去水分,加入粗鹽1茶匙乸5分鐘,去除雪味、腥味,及加入少許鹹味。
4. 辣椒仔,去椗,打直1開2,去籽。
蒜頭,去皮。
5. 蒜頭,辣椒仔及豆豉,清水洗乾淨,切碎。
6. 鳳爪及排骨,清水沖洗乾淨,擎乾水。
7. 鳳爪,切去趾甲。
8. 鳳爪及排骨,廚紙索乾,分別放在2個碗內。
9. 加入調味料:
排骨 鳳爪
a. 生粉 1/3湯匙 1/3湯匙
b. 糖 1/3湯匙 1/3湯匙
c. 泰國蠔油 1湯匙 半湯匙
d. 胡椒粉 適量 適量
d. 油 半湯匙 1/3湯匙
e. 生抽 - 1/3湯匙
f. 老抽 - 1/3湯匙
10. 蒜頭,放一半份量在排骨及鳳爪內,同時加入油1/3湯匙。
11. 辣椒,放一半份量在排骨內,少許放在鳳爪內。
12. 豆豉,加入排骨內。
13. 撈勻排骨及鳳爪,醃10分鐘。

烹調:
1. 白米,放入電飯煲內,清水洗乾淨。
2. 白米,加入清水,米與水的比例1:1.5。
3. 排骨,放在米上。
4. 開始煮飯。
5. 飯差不多收乾水,放鳳爪在排骨上。
6. 開掉電源,重新煮飯一次。
7. 完成,灑上蔥粒在排骨及飯上。
8. 可享用。

Pork ribs rice and chicken feet with rice cooker

Ingredients:
Frozened chicken feet (fried) 7 Nos.
Frozened pork ribs 10 cubes (about 0.5 catty)
Preserved beans 15 Nos.
Chili 1 No.
Garlics 4 Nos.
Plain rice 2 plastic cups

Preparation:
1. Chicken feet, defrost in tap water.
2. Pork ribs, defrost in tap water.
3. Pork ribs have been defrosted, pour away water. Season with 1 tsp of cooking salt for 5 minutes, to remove unpleasant smells and add some salty tastes to them.
4. The chili, cut off anchors. Divide it into 2 shares vertically. Remove seeds.
The garlics, get them peeled.
5. Garlics, chili and preserved beans, rinse with tap water. Chop well.
6. Chicken feet and pork ribs, rinse with tap water. Drain.
7. Chicken feet, cut off nails.
8. Chicken feet and pork ribs, dry with kitchen towels. Put them in 2 separate bowls.
9. Add seasoning:
Pork ribs Chicken feet
a. Tapioca starch 1/3 tbsp 1/3 tbsp
b. Sugar 1/3 tbsp 1/3 tbsp
c. Thai oyster sauce 1 tbsp 0.5 tbsp
d. Pepper appropriate appropriate

e. Oil 0.5 tbsp 1/3 tbsp
f. Light soya sauce - 1/3 tbsp
g. Dark soya sauce - 1/3 tbsp
10. The garlics, put half into the pork ribs and chicken feet. Add in 1/3 tbsp of oil at the same time.
11. The chili, put half into the pork ribs. Put little chili into the chicken feet.
12. Preserved beans, add into the pork ribs.
13. Mix the pork ribs and chicken feet well. Season for 10 minutes.

Steps:
1. Plain rice, put into a rice cooker. Rinse with tap water.
2. Plain rice, add in water. The ratio of rice and water is 1:1.5。
3. Pork ribs, put on top of rice.
4. Start cooking.
5. Rice starts has been almost cooked well, put chicken feet on top of pork.
6. Turn off power. Restart the rice cooker again. Cook once more.
7. Complete. Put green onion cubes on top of pork ribs and rice.
8. Serve.
