荷蘭豆炒五花肉

材料：
荷蘭豆半磅
急凍五花肉片半磅
甘筍1條
蒜頭3粒
薑1舊
辣椒仔2隻

處理：
1. 肉片，打橫1開3，清水解凍。
2. 肉片解凍後，倒去水分，加入粗鹽半湯匙乸5分鐘，撈勻以去除雪味、腥味，及加入少許鹹味，清水沖洗乾淨，廚紙索乾。
3. 肉片，加入調味料：
a. 胡椒粉適量
b. 蠔油1茶匙
撈勻。
4. 荷蘭豆，搣去根，加入粗鹽1茶匙，清水浸5分鐘。
5. 甘筍，去皮，斜切片。
蒜頭，去皮。
薑，去皮，切片。
辣椒仔，清水洗乾淨，去椗，切粒。
6. 荷蘭豆，清水沖洗乾淨，擎乾水。
7. 大火煲滾半鑊水，加入少許油及鹽半茶匙，灼荷蘭豆30秒，加入甘筍，灼一灼，放入凍水。

烹調：
1. 大火在鑊內燒熱油1茶匙。
2. 煎香五花肉，同時加入蒜頭及薑片。
3. 肉片已煎至金黃色，轉慢火，加入調味料：
a. 蠔油1茶匙
b. 蝦醬1／4茶匙
c. 糖1茶匙
轉大火，炒香，加入荷蘭豆及甘筍，炒勻。
4. 加入生粉芡，炒勻。
5. 完成，上碟，可享用。

Stir frying sliced pork belly with snow peas

Ingredients:
Snow peas 0.5 lb
Frozen sliced pork belly 0.5 lb
Carrot 1 log
Garlics 3 Nos.
Ginger 1 No.
Chili 2 Nos.

Preparation:
1. The pork, divide each sluce into 3 shares. Defrost in tap water.
2. The pork, pour away water after defrost. Season with 0.5 tbsp of cooking salt for 5 minutes to remove unpleasant smells and add some salty tastes to it. Rinse thoroughly. Dry with kitchen towels.
3. The pork, add seasoning:
a. Pepper appropriate amount
b. Oyster sauce 1 tsp
Mix well.
4. The peas, tear off roots. Add in 1 tsp of cooking salt. Soak in tap water for 5 minutes.
5. Carrot, get it peeled. Slantly slice.
Garlics, get them peeled.
Ginger, get it peeled and sliced.
Chili, rinse with tap water. Cut anchors. Dice in cubes.
6. The peas, rinse thoroughly. Drain.
7. Heat up half wok of water. Add in little oil and 0.5 tsp of salt. Soak the peas for 30 seconds. Add in carrot. Soak for a while. Put into tap water.

Steps:
1. Heat up 1 tsp of oil at high flame in wok.
2. Fry the pork well. Add in garlics and ginger at the same time.
3. The pork has been fried into golden yellow, turn to low flame. Add seasoning:
a. Oyster sauce 1 tsp
b. Shrimp paste 1/4 tsp
c. Sugar 1 tsp
Turn to high flame. Fry well. Add in the peas and carrot. Fry well.
4. Add in tapioca sauce, fry well.
5. Complete. Put on plate. Serve.
