Crispy Potato Balls

Ingredients

4 russet potatoes

3 tbsp cornstarch

2 tbsp dried oregano

2 tsp garlic powder

2 tsp onion powder

3 tsp smoked paprika

½ tsp ground cumin

2 tbsp fresh parsley, chopped (plus extra for garnish)

Salt & freshly ground black pepper, to taste

Neutral oil, for frying

Freshly grated Parmesan, for serving

Instructions

Bring a pot of salted water to a boil and cook potatoes until fork-tender, about 20–25 min. Drain well, then return them to the hot pot for 1–2 min to steam off excess moisture.

Mash potatoes in a large bowl until smooth. Mix in cornstarch, oregano, garlic powder, onion powder, smoked paprika, cumin, parsley, salt, and pepper until a cohesive dough forms.

Scoop about 2 tbsp of the mixture, roll into compact balls, and repeat until all dough is used (makes about 20–24).

Heat oil in a deep pan to 360 degrees. Fry balls in batches, turning occasionally, until golden and crisp, 7–10 min. Remove with a slotted spoon and drain on paper towels. Season lightly with salt while hot.

Serve warm, topped with Parmesan and extra parsley.
