3 types of dal

White dal

Urad dal boiled 2 cup
Ghee ¼ cup
Ginger-garlic paste 1 tbsp
Dry red chillies 2 pcs
Salt 1 tbsp
Green chillies 2 pcs
Ginger juliennes 1 tbsp
Black pepper powder 1 tsp
Jeera powder ½ tbsp
Coriander powder 1 tbsp
Amchoor powder 1 tbsp
Cream 2 tbsp

Pressure cook urad dal for 4 whistles with salt in it. Keep it aside.
For kadhai masala, roast jeera, coriander seeds, fennel seeds, black pepper, dry red chillies and pound it to coarse powder.

Take a pan, add ghee, ginger-garlic paste, chopped green chillies, sliced tomatoes, dry red chilli and saute them.
Then add jeera powder, coriander powder, black pepper powder and saute.
Then add kadhai masala and stir.
Add cooked dal, water and stir.
Then add amchur powder, salt and cook for 5-10 mins.
Lastly add cream and stir it.
Serve hot.





Kulit horse gram dal

Horse gram soaked 1 cup
Tomatoes 1 pcs
Garlic 5-6 cloves
Cloves crushed 4-5 pcs
Green chillies 2 pcs
Ginger chopped 1 tbsp
Turmeric powder 1 tsp
Mustard oil 2 tbsp
Jeera 1 tsp
Crushed coriander seeds 1 tbsp
Mustard seeds 1 tsp
Dry red chillies 2 pcs
Hing 1 tsp
Red chilli powder ½ tbsp
Amchur powder 1 tsp
Chopped coriander 1 tbsp

Take a pressure cooker, add soaked kulit dal, tomato dices, crushed cloves, crushed garlic, slit green chillies, ginger, turmeric, water and cook for 4 whistles.
Heat a pan, add mustard oil, jeera, crushed coriander seeds, mustard seeds, dry red chillies, hing, red chilli powder, garlic and saute for a few seconds.
Later add boiled dal and stir. Add as much water required.
Adjust the salt as per taste, add amchur powder, chopped coriander and cook for 10-12 mins.
Kulit dal is ready to serve.


Green moong dal makhani

Soaked green moong dal 1 cup
Oil 1 tbsp
Salt 2 tbsp
Ginger juliennes 2 tbsp
Green chillies 2 pcs
Turmeric powder 1 tsp
Deghi mirch powder 1 tbsp
Kasoori methi 2 tbsp
Tomato puree tinned ½ cup
Butter 3 tbsp
Fresh cream 2 tbsp
Garam masala 1 tsp


Take a pressure cooker, add soaked green moong dal, oil, salt, ginger juliennes, slit green chillies, water and cook for 4 whistles.
Heat a pan, add ginger-garlic paste, deghi mirch powder, turmeric, ginger juliennes, kasoori methi and saute.
Then add tomato puree and cook for a minute.
Add boiled dal and cook for 10-15 mins or until dal gets mashy. Keep stirring it at intervals.
Then add butter, fresh cream and cook for a minute.
Lastly add garam masala, kasoori methi and stir.
Dal makhani from whole green moong dal is ready to serve.
