話咁快就黎到旅程最後一個站lu。我哋喺法國巴黎留咗五日。今次呢個餸會用特別啲嘅食材: 牛胸腺,再配一個法式薯仔。

The final stop of our trip. We stayed in Paris for five days, half of the time was for Fung to do her thang: Shopping. Today's dish will be pan fried sweetbread with potatoes salardaises.

二人份量 For two people

牛胸腺材料 Ingredients for sweetbread:
牛胸腺500克 - 500g of sweetbread
牛奶700毫升 - 600ml of milk
迷迭香一條 - 1 sprig of rosemary
百里香兩條 - 2 sprigs of thyme
月桂葉一片 - 1 bay leaf

砵酒 (波特酒) 醬汁材料 Ingredients for port sauce:
紅蔥頭兩個 - 2 shallots
蒜兩瓣 - 2 cloves of garlic
牛油30克 - 30g of butter
迷迭香一條 - 1 sprig of rosemary
月桂葉一片 - 1 bay leaf
砵酒 (波特酒)500毫升 - 500ml of port wine
牛肉清湯200毫升 - 200ml of beef stock
鹽少量 - pinch of salt

Salardaises 薯仔材料 Ingredients for potato salardaises
新薯五個 - 5 new potatoes
番荽八條 - 8 stems of parsley
鹽少量 - pinch of salt
黑胡椒粉少量 - pinch of black pepper
鴨膏一湯匙 - 1tbsp of duck fat

蔥一條 - spring onion for garnish
黑松露 - black truffle for garnish
