Lens hoods are of limited utility with smaller format cameras, however with large format they can improve image quality significantly. Large format lens hoods aren't tiny screw-on attachments, they are necessarily large and bulky because they need to be adjustable to allow for lenses of different focal lengths and camera movements.

In this video, the photographer discusses their recent adventures with a Fujinon W 250mm f6.7 lens on their Toyo Field 45A camera at Lachlans Line pedestrian bridge. The single-coated Fujinon W 250mm f6.7 lens has an unusually large image circle for its focal length, 398mm, which covers 8x10 with several centimetres of room to spare (the newer 250mm f6.3 lens does NOT cover 8x10). Of that huge 398mm circle of light projected into the camera only a fraction is shining directly on the film; the rest will bounce around inside the bellows and also end up on the film as fog, reducing contrast.

So the lens hood's job is twofold: to shield the front of the lens from bright light outside the field of view shining directly onto and into it; and to block the lens' excess non image forming light from getting into the camera because it too will end up on the film as fog and internal reflections.
