Poudine Mais

Recipe:
250g Cornmeal
170g Sugar
1 tsp Vanilla Extract
Golden Raisins (Optional)
500ml Milk
1 tsp Butter
Desiccated Coconut

Directions:

1. Soak the cornmeal overnight, pour out the water ensuring all the particles that float on top are poured out too.
2. Wash the corn well and add a little bit of water.
3. Bring this to a boil whilst stirring frequently.
4. When the water has been absorbed, reduce the heat and add the sugar, milk, butter and vanilla extract.
5. Keep stirring to prevent it from sticking to the bottom of the pan.
6. You will see the liquid will be absorbed and it becomes thick.
7. Pour the mixture into a greased dish or tray, smooth the top with the back of a spoon.
8. Sprinkle as much coconut as you would like and top with golden sultanas if you desire.
9. Once cooled to room temperature, place it in the fridge to set.
10. Cut into squares and enjoy!
