It's a wonderful beer with Galaxy and Mandarina Bavaria this week as we test out, new from Lallemand, American East Coast Ale Yeast!

This new yeast from Lallemand took off in the fermentor for John. A 1.060 SG and one package was fermenting in less than 24 hours. The yeast went straight in with no rehydrating. The fermentation character really seemed to support the hop profile John was going for. It only fermented for 10 days yet it finished nice and dry at 1.011.

This beer showcases a combination of Galaxy and Mandarina Bavaria hops. John was going to that tropical fruit thing from the Galaxy with a nice orange/tangerine presence from the Mandarina Bavaria. I think he really nailed it with this one. The grain bill was very simple. He even used a little table sugar which we think dried the beer out and kept it pretty drinkable.
