Crumble Cake:
For the Crumble Topping:

100 grams of all-purpose flour
1/4 teaspoon of salt
120 grams of brown sugar
1 teaspoon of ground cinnamon
4 tablespoons of softened butter

For the Cake Batter:

300 grams of all-purpose flour
1/2 teaspoon of salt
1 1/2 teaspoons of baking powder
120 grams of softened butter
160 grams of granulated sugar
1 teaspoon of lemon zest (optional)
1 large egg, at room temperature
1 teaspoon of vanilla extract
80 ml of milk
2 cups of fresh raspberries

Raspberry Crumble Cake:

Preheat Oven: Preheat your oven to 350°F (180°C). Prepare a 8-inch (23 cm) round cake pan by greasing and flouring it, or lining it with parchment paper for easy removal.

Prepare Crumble Topping: In a mixing bowl, combine 100g of flour, 1/4 teaspoon of salt, 120g of brown sugar, and 1 teaspoon of cinnamon powder. Add 4 tablespoons of softened butter and mix until the mixture resembles coarse crumbs. Set aside.

Prepare Cake Batter: In another mixing bowl, sift together 300g of flour, 1/2 teaspoon of salt, and 1 1/2 teaspoons of baking powder. Add 120g of softened butter and 160g of sugar, then mix until the mixture is crumbly.

Add Flavorings: Stir in 1 teaspoon of lemon zest (optional) for a refreshing citrus flavor. Then add 1 egg at room temperature and 1 teaspoon of vanilla extract. Mix until well combined.

Incorporate Liquid: Gradually add 80ml of milk to the batter, mixing until smooth and well incorporated. The batter should be thick yet pourable.

Layer Batter and Raspberries: Pour the cake batter into the prepared cake pan, spreading it evenly.

Add Crumble Topping: Sprinkle the prepared crumble topping evenly over the top of the cake batter, covering it completely.

Bake: Place the cake pan in the preheated oven and bake for 55 minutes to 1 hour, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Cool and Serve: Once baked, remove the cake from the oven and allow it to cool in the pan for about 10minutes. Then, carefully transfer it to a wire rack to cool completely before slicing and serving.
