INGREDIENTS for the Berta Jay's
Another Kale Veggie Mix

INGREDIENTS
½ cup vegetable broth (or water if you prefer)
½ cup onion chopped
1 stalk celery chopped (about a ½ cup)
2 cups mushrooms chopped (use your favorite; I used cremini, baby bella an shitake)
1 clove of garlic - chopped
1½ teaspoons Italian spices
smidgen of black pepper
½ teaspoon salt
½ teaspoon paprika
4 cups kale chopped and packed down in measuring container

INSTRUCTIONS
1. Put a medium/large pot on a medium/high heat and ADD ½ cup of veggie broth and bring to a vigorous boil.
2. ADD the onions, celery and mushrooms to the pot. Turn heat down to medium.
3. PUT the lid on the pot and cook for 4-5 minutes. ADD garlic and cook for another 20-30 seconds.
4. ADD spices and stir for 1 minute.
5. ADD the kale and lower the heat to medium/low. Put the lid on the pot after stirring to mix well.
6. COOK for 5 minutes. ADD grated carrots and COOK another minute.
7. You are done. Enjoy!
