A celebration of seasonal eating- a delicious spiced chutney made with courgettes, apples, red onion and ginger. Perfect paired with mature cheddar, or on the side of cured meats.

Courgette and Apple Chutney (Makes 1.6kg chutney roughly)
Total cost- £5.79 Cost per jar- £1.16. (Much cheaper if you grow/pick your own!)

1kg Courgettes, very finely chopped £2
1kg Cooking Apples, peeked, cored and finely chopped £1.95
1 Red onion, finely chopped 20p
400ml Cider Vinegar 90p
350g Sugar 26p
1/2 tsp Allspice 7p
Large chunk of Fresh Root Ginger, peeled and finely chopped 40p
Salt and pepper 1p

1) Put all ingredients into a very large saucepan (or preserving pan if you have one), and cook on maximum heat, stirring often, for 45 minutes.

2) Check consistency- the volume should have reduced by 1 third, all the vegetables should be soft, and there should be a slightly glossy liquid to it (but not a thick syrup). Allow to settle/ cool for at least 10 minutes.

3) Spoon into sterilised jars and allow to cool completely. Put lids on them, label them, and it’s done!

*Lasts up to 1 year in sterilised jars, about 6 months if kept in a Tupperware in the fridge.
