Special trick of making Sev for perfect results everytime.

In a pan, heat
3/4 th cup water
1 tsp Salt
1 Tbsp oil
1/2 tsp Baking soda

bring it to boil once, let it cool.

In a bowl
sift 2 cups Besan
1 tsp red chili powder
1 tsp Ajwain ( carrom seeds)

Add water and baking soda mix into flour [ it should be slightly warm]

knead a dough. No additional water is needed.
take few tsp oil + water 💧 in palm and knead a dough for few minutes until dough changes to lighter color.

Now grease the cookie press [sancha] and put the dough in it. use thick Sev plate and fry directly into hot oil.

Sprinkle special spice mix. and enjoy.
