KAMJATANG OR GAMJATANG is a spicy Korean soup made from the spine or neck bones of a pig cooked for long hours. Kamja or Gamja means potatoes in Korean, and Tang means soup, hence the name Kamjatang/Gamjatang literal translation is Potato Soup. Other ingredients include fermented soya bean paste, perilla leaves, green onions, hot peppers and ground sesame seeds.

Having a bowl of this soup in winter time would be hearty and comforting. The meal is usually served with side dishes like kimchi, cucumber, bean sprout and others and a bowl of rice. This steaming spicy soup is served as a lunch or dinner and often as a late night snack, as well. I can be a hang over soup, too.

The red colour soup base came from the red hot peppers.

Ingredients
8 green outer nappa cabbage leaves
2 1/2 lb pork neck bone or baby back ribs
1 pc yukon gold potato, peeled, cut in medium size
1/3 cup Wild sesame seeds (Perilla Sesame Seed)

Spice Bag

2 pcs Bay leaf
3 thumb size ginger slices
3 green onions, cut in 2 inches
6 cloves garlic, cut in halves
1/2 medium size onion, cut into quarters
1Tbs black pepper corn
wild sesame seeds powder (garnish)
2 to 3 green onions, sliced (garnish)
sesame seeds
Sesame oil

For the sauce

2 Tbs doenjang, Korean fermented soy bean paste
4 cups cold water
1/3 cup gochugaru, Korean red pepper flakes
2 Tbs fish sauce
1/4 cup wild sesame seeds powder
2 Tbs chopped garlic (approximately 6 to 8 cloves garlic)
1/4 tsp black pepper
3 Tbs soup broth or water
