INGREDIENTS for 6 pcs (standard size)
2 large (70 g) strawberry
2 eggs (100 g)
1/2 cup (100 g) sugar
3 oz (85 g) unsalted melted butter
1 cup (135 g) all-purpose flour
1 tsp (4 g) baking powder
1/8 tsp (1 g) salt
2 medium strawberries (sliced)
(Note: If the strawberries are sour, add 1 teaspoon or more sugar into the mashed strawberries)

DIRECTIONS:
1. Preheat the oven.
2. Mash the strawberries and set aside.
3. In a bowl, combine eggs, sugar, butter and whisk until smooth. (Note: it is easier to whisk with an electric mixer)
4. Sift in the flour, baking powder, salt and whisk until combined.
5. Scoop the batter into the baking pan. You should have enough batter for 6 muffins.
6. Slice two strawberries and scatter on top of the batter.
7. Bake at 375°F (190°C) for 20-23 minutes until toothpick inserted comes out clean.
8. Remove from oven. Transfer to cooling rack to cool down completely.
9. Serve and enjoy!
