Artisan Dough

700 g Water
15 g dry yeast
100 g rye flour
770 g unbleached flour
25 g salt

Mix and let rise until doubled. Put in the refrigerator for 1-2 days. Form loaf , rise at room temp , score and bake 450 degrees for 40 minutes . 20 minutes covered and 20 minutes uncovered.
