Hello everyone,
In this I'm demonstrating how to make of my childhood dishes Bánh Bột Lọc. It's super popular in my hometown, or you can say it's everyone's favorite snack.
Recipe:
1 bag of tapioca flour (32oz)
1 cup of shrimps, 1 cup of cubed pork belly
Some shallots
Some chopped green onion and cilantro
Fish sauce, sugar, black pepper, water
1) Fillings:
Heat up a pan, add in 1 tbsp of oil with 1 tbsp of sugar. When the sugar turns brownish liquid, add in the shrimps. Stir fry the shrimps until firming up (7-10mins). Then add in the meat. For seasoning, add in 3 full tbsp of sugar, 2 tbsp of fish sauce with 2 tbsp of water. Let it cook until the sauce thickens up then add in some chopped green onion and cilantro with a pinch of black pepper.
2) Skin dough:
With one bag of tapioca, we use one cup of boiling water. Mix the flour with water until it comes together then start kneading the dough. Be careful since the water was really hot. Add in extra flour if feels a bit wet or sticky. Then continue kneading until it doesn’t stick to your hands anymore.
To make the dumplings, cut the dough into small portions size of 1x1x1inch. Roll it inside of your palms then flatten it with your fingers. Don’t go too thin since the stuffing can easily poke through the skin. Next, add in the shrimp and pork 1 piece of each. Then wrap it like a taco and start pinching the edges together. Make sure that it doesn’t leak.
To cook the dumplings, you can either boil them or fry them.
When boil the dumplings make sure you have enough water to cover them. At boiling point, add in the dumplings. They’re cooked is when everyone of them starts floating to the surface. Drain them, put in cool water for 5 mins, drain again and serve.
To fry them, check the oil by dipping the chopsticks into the oil it’s ready when it bubbles passive aggressively. Add in the dumplings and fry them until you press against the skin, it’s hard like a rock then they’re ready to be served. It’s ok if they tend to stick together.
