In this video I visited a Tortilleria in Mexico City owned by Santiago Muñoz called Maizajo. Maizajo is one of the only places in Mexico City that is making corn masa the traditional way through the ancient technique of Nixtamalization. Nixtamalization is a 5,000 year old process where corn is cooked and steeped in an alkaline solution to break down its cellular structure to become digestible. It was essential to the growth of the Mesoamerican population and is one of the reasons Mayans and the Aztecs grew to such dominance, by being able to feed their people. Maizajo is reintroducing Nixtamalization to the City of Ciudad de Mexico to help keep this tradition alive.
