This EASY No Bake Strawberry Cheesecake is the perfect dessert for those warm days when you don't want to turn on the oven. It starts with a buttery digestive or graham cracker crust that’s super easy to make – just mix crushed digestives or graham crackers with a bit of sugar and melted butter, then press it into the bottom of a spring form pan and pop it in the fridge to set.

The filling is a dreamy blend of creamy goodness. Mix softened cream cheese with powdered sugar and vanilla for sweetness and flavor. To make it extra light and fluffy, fold in some whipped cream. Fresh, chopped strawberries add bursts of juicy sweetness to every bite. To help it hold its shape, there's a bit of gelatin mixed in – don’t worry, it's easy to work with and makes the cheesecake slice beautifully.

For the Crust:
250g Digestive biscuits or - 1 ½ cups graham cracker crumbs (about 10-12 graham crackers)
50g - ⅓ cup granulated sugar
120g - ½ cup unsalted butter, melted

For the Cheesecake Filling:
16 oz (450g) cream cheese, softened
50g powdered sugar
1 teaspoon vanilla extract
1 cup – 240g - heavy whipping cream, cold
1 cup fresh strawberries, chopped
2 teaspoons unflavored gelatin
¼ cup water

For the Strawberry Topping:
Instant jelly powder or cubes as per packet instructions
2 teaspoons unflavored gelatin
¼ cup water
