Easy and Simple Padavalakai Palya or Snake Gourd Fry in traditional style. Tastes a little sweet and spicy as well. Narrated in Kannada.

This sweet and spicy Palya or Fry is quick and easy to make for lunch or dinner. Goes well with Plain Rice or Chapati.

Ingredients:

Snake Gourd - 2 (Chopped)
Oil - 1 Tbsp
Mustard Seeds - 1 tsp
Urad Dal / White Lentils - 1/2 tsp
Curry Leaves - 8-10
Slit Green Chillies - 2
Turmeric Powder - 1 tsp
Salt
Jaggery - 1/2 tsp
Grated Coconut - 2-3 Tbsp

Method:

1. Add 1 Tbsp Oil to a pan.

2. Once Oil is hot, add 1 tsp Mustard Seeds. Once Mustard Seeds splutter, add 1/2 tsp Urad Dal.

3. Add 8-10 Curry Leaves, add 2 slit Green Chillies.

4. Once all these are fried, add finely chopped tender Snake Gourd / Padavalakai.

5. Add 1 tsp Turmeric Powder and mix well. Add water till the chopped Snake Gourd is immersed. Close the lid and allow to cook.

6. Open the lid in intervals, mix everything once, close the lid and allow to cook. Water content should disappear.

7. Once the water is completely absorbed, add Salt as per taste. Add 1/2 tsp Jaggery and mix well.

8. Add 2-3 Tbsp grated Coconut and mix well. Finally, add Coriander Leaves and mix well.
