Learning how to cold smoke cheese is probable one of the first exercises in learning to smoke food. It requires no curing, salting or other complicated processes. Just unwrap the cheese, place it on a rack and add some cold smoke to it.

Smoked Stilton, Edam & Camembert are a trio of cheeses that I love to eat. The edam is a lovely melting cheese, the Stilton is creamy, smokey and complex and the Camembert held the smoke even when roasted and was delicious even though we didn't shoot the footage - Sorry folks! My bad!!.
