Ingredients:

To Clean & Marinate Botti:

1. Goat Intestine / Botti – 1 (cleaned thoroughly)
2. Ginger Garlic Paste – 1 tbsp
3. Turmeric Powder – ½ tsp
4. Salt – ¾ tbsp

For the Gravy:

1. Bengal Gram / Chana Dal – 1 cup (soaked for 30 mins)
2. Onion – 3 (sliced)
3. Tomato – 2 (chopped)
4. Green Chillies – 2 (slit)
5. Turmeric Powder – ½ tsp
6. Red Chilli Powder – 1½ tsp
7. Oil – As needed
8. Cinnamon – 1
9. Cardamom – 2
10. Clove – 1
11. Coriander Leaves – handful
12. Mint Leaves – handful
13. Salt – as required

How to Make Mutton Botti / Aatu Kudal Kolambu:

1️⃣ Marinate cleaned goat botti with ginger garlic paste, turmeric, and salt.
2️⃣ In a pan, boil the marinated botti for 15 minutes, stirring occasionally until water reduces. Set aside.
3️⃣ In a pressure cooker, heat oil and sauté cinnamon, cardamom, and clove.
4️⃣ Add onions, salt, green chillies, and sauté till golden.
5️⃣ Add tomatoes, turmeric powder, and soaked Bengal gram. Mix well.
6️⃣ Add mint & coriander leaves, red chilli powder, and a dash of water.
7️⃣ Add the boiled botti to the masala and mix everything well.
8️⃣ Pressure cook for 3 whistles.
9️⃣ Garnish with coriander leaves and serve hot!
