Dan's World Famous Roast Chicken in a Dutch Oven

Recipe:
Preheat oven to 350.
Clean and pat dry a chicken, 4-6 lbs.
Put celery stalks on bottom of dutch oven, enough to keep chicken from touching bottom of pan (if you prefer to eat veggies, then throw in veggies of your choice).
Sprinkle 2 teaspoons salt, 1 teaspoon pepper inside and outside of chicken.
Put total of 1 tablespoon (1/4 tablespoon each) under the skin and on top of the meat at each breast and where breast meets leg.
Put 1/2 - 1 lemon, quartered, with some herbs (rosemary, thyme, sage) inside cavity.
Truss chicken. Fold wings underneath back (I forgot this in the video)
Put a lid on the oven.
Cook for 1 hour, to 1 hour and 10 minutes. The chicken skin will not have browned yet.
Take lid off, finish cooking for about another 30 minutes., to about 40 minutes, until the meat registers at the correct temperature.
When done, take dutch oven out of oven, let sit for about 20 minutes.
Take chicken out of dutch oven, cut string, and carve.
