HOW TO MAKE THE CLASSIC BASIL SMASH COCKTAIL
2 oz Gin
1 oz Lemon juice
0.75 Simple syrup (1:1 ratio)
10 Basil leaf
Muddle the basil with the gin
Add the other ingredients
Shake with ice
Fine strain over ice
Garnish with fresh basil

HOW TO MAKE THE GREEN PARK COCKTAIL
A basil cocktail recipe I love more than the Basil Smash
2 oz Old Tom gin
1 oz Lemon juice
0.5 oz Simple syrup (2:1 ratio) or 0.75 oz of 1:1 ratio syrup
1 Dash Celery bitters
8-10 Basil leaf
1 Egg white
Muddle the basil with the gin
Add the other ingredients
Shake with ice
Dump the ice and shake again without ice
Fine strain in a coupe
Garnish with fresh basil

HOW TO MAKE THE SAVOY GARDEN
My riff on the Classic Basil Smash recipe
2 oz Gin
1 oz Lime juice
0.5 oz Italicus
0.5 oz Milk liqueur
8-10 Basil leaf
Shake with ice
Fine strain over ice
Garnish with pineapple and Campari foam *

* How to make the foam
Simply blend at high speed 150 ml of fresh pineapple juice with 30 ml of campari. Let sit for 2 minutes and scoop out the foam with a julep strainer.
