STEAMED RICE CAKE | Ala Puto Calasiao Using Rice Flour

STEAMED RICE CAKE ALA PUTO CALASIAO is a famous rice cake in Calasiao, Pangasinan. Basically it is made from fermented ground rice and sugar. Fermentation is done in an earthen jar and this process will serve as the leavener. My version is quite different from the traditional one, i uses a rice flour here, and in the absence of an earthen vessel i uses an instant dry yeast and baking powder as leavener and the fermentation process is shorter than the traditional one. I call this recipe as Puto Ala Calasiao in 3 variant flavors, and the taste and shape of the rice cake resembles the original Puto Calasiao of Pangasinan.

3/4 cup sugar
1/8 tsp fine salt
1 1/2 cup water
1 tsp instant dry yeast or
1 tsp baking powder

1 cup water
