Mapo tofu (pinyin: má pó dòu fu; 麻婆豆腐), is one of the traditional dishes in Sichuan Province. This dish is numb, spicy, fresh, fragrant, and hot. , green, tender, and crispy, it shows the spicy and spicy characteristics of Sichuan cuisine. Today, Mapo tofu has jumped into the hall of fame and became an international famous dish.
"Mapo Tofu" was rated as one of the "Chinese Cuisine" top ten classic dishes in Sichuan.

Mapo Tofu - recipe:
Ingredients:
Soft tofu, 400g
Ground beef, 100g
Doubanjiang(broad bean paste), 2 tbsp
Douchi(Fermented black beans), 1 tsp
Ginger , 1 piece
Garlic, 3 cloves
Green Onion/Garlic, 2 stalks
Ground Chili, 1 tbsp
Ground Szechuan Peppercorn, 1 tsp
Ground White Pepper, 0.5 tsp
Potato/Corn starch, 1 tbsp
Blanch the tofu:
1.Cut the tofu to 2cm cubes
2.put the tofu cubes in boiling water
3.Add in 10g of salt
4.Turn the heat to low and simmer for 10min
5.Set them aside
Braise the tofu:
0.Prepare the starch slurry using potato/corn starch, starch to water, 1:3
1.Chop ginger, garlic and green onion/green garlic
2.Chop Doubanjiang
3.Have all the condiments ready
4.Heat pan on medium, oil, fry the minced meat until golden brown
5.Ginger, garlic, doubanjiang, douchi, ground chili in, fry until fragrant
6.Add water/stock
7.Add in tofu and simmer for about 10-15min
8.Thicken the sauce with slurry, add in half green onion.
9.Sprinkle on other half green onion, and ground Siichuan peppercorn
