Savoury deep fried fritters – done two ways!
(With sweetcorn or saltfish)

INGREDIENTS (2-3 servings)

Approx 100g sweetcorn kernels or
1 saltfish fillet, (appox 250g pre-salted) soaked in hot water, rinsed a few times, drained and flaked finely;

1/2 red (bell) pepper;
1 large spring/green onion/scallion;
1 small scotch bonnet pepper;
150g self raising (rising) flour
(can be gluten free);
125-150ml ice cold sparkling water or ginger beer;
Small handful of fresh parsley/coriander (cilantro);
Your choice of spices – we used ½-1 teaspoon of the following:
Ground ginger/smoked paprika/allspice/ground cumin/
ground turmeric/dried thyme/nori flakes/ground black pepper/salt.
NB: use fresh ground/minced garlic and ginger instead of powdered.
Use a good Caribbean-style all purpose seasoning instead, to taste.
Vegetable oil for deep frying.

Method:
This couldn’t be simpler!
1. Combine all of the ingredients, except the water/ginger beer, and oil together in a bowl and mix thoroughly.
2. Gradually add the sparkling water/ginger beer. If using gluten free flour, you will need most if not all of the water,
as it absorbs more liquid than normal flour.
3. Combine gently but thoroughly, until the mixture resembles thick but loose porridge/oatmeal.
4. Heat the oil in a deep pan, wok or skillet until hot enough to fry a breadcrumb (around 180 degrees).
5. Using a small spoon to create bitesized fritters, place spoonfuls of the mixture into the hot oil – no more than four or five at a time.
6. Cook until the fritters rise to the top of the oil, then cook for another 30 seconds, then remove from the pot with a slotted spoon.
7. Place onto kitchen paper to drain any excess oil.
8. Eat straightaway with your favourite dipping sauce (for our banana sweet chilli sauce, click here: )
9. These also taste good cold or reheated in a hot oven or even better in an air fryer for a few minutes.
10. These are also good in a bun with your favourite pickles and salad!
