Description

Vangi Bath is a popular South Indian rice dish made with brinjal (eggplant) and a special spice mix. Here’s a simple recipe to make it:

Ingredients:
**Rice**: 1 cup (cooked and cooled)
**Brinjal (Eggplant)**: 5-6 small ones (sliced)
**Oil**: 2-3 tbsp
**Mustard seeds**: 1 tsp
**Curry leaves**: 1 sprig
**Green chilies**: 2-3 (slit)
**Asafoetida (hing)**: a pinch
**Turmeric powder**: 1/4 tsp
**Tamarind paste**: 1 tsp (optional)
**Salt**: to taste
**Grated coconut**: 2-3 tbsp (optional)

For Vangi Bath Powder (Spice Mix):
**Chana dal**: 1 tbsp
**Urad dal**: 1 tbsp
**Coriander seeds**: 2 tbsp
**Cumin seeds**: 1 tsp
**Fenugreek seeds**: 1/4 tsp
**Dry red chilies**: 4-5
**Cinnamon stick**: 1 small piece
**Cloves**: 2
**Dry coconut**: 2 tbsp (optional)

Instructions:

1. **Prepare Vangi Bath Powder**:
Dry roast chana dal, urad dal, coriander seeds, cumin seeds, fenugreek seeds, dry red chilies, cinnamon, and cloves until aromatic.
Once roasted, let them cool and grind to a fine powder. Add dry coconut (optional) while grinding.

2. **Cook Rice**:
Cook rice and let it cool completely. The grains should be separate.

3. **Cook Brinjal**:
Heat oil in a pan, add mustard seeds and let them splutter.
Add curry leaves, green chilies, and asafoetida.
Add the sliced brinjal and turmeric powder. Fry them on medium heat until soft.

4. **Mix the Vangi Bath**:
Add the prepared vangi bath powder to the brinjal, mix well, and cook for 2-3 minutes.
Add tamarind paste (if using) and mix again.
Add the cooked rice and salt. Gently mix until everything is combined.
Garnish with grated coconut if using and serve hot.

Vangi Bath is usually served with papad or raita. Enjoy!
