These are beautiful and light. No messing around. Quickly mix, shape and bake. There’s no kneading involved here. Done traditionally. I went with buttermilk again and used plain flour this time. Soft, fluffy, crumbly and moist. They just melt in your mouth these 😋

Recipe

230g of Plain Flour
20g of Baking Powder
Light pinch of salt
50g of Unsalted Butter (softened)
100g of grated Red Cheddar Cheese
200ml of Buttermilk

Note: Hold back a bit of the buttermilk just in case. Some flours absorb differently depending on protein levels. It needs to resemble the consistency of the dough in the video 😊

Sieve the dry ingredients. Rub in the butter then add in the grated cheddar and mix it around. Add the buttermilk and mix with a spoon just until it all comes together. Shape to a ball very lightly on a floured surface then roll out to a thickness of about 2 1/2 cm. I cut them out with a 6cm cutter but you can do them whatever size ya want. Dip the cutter in flour and push down straight. Try not to twist

I got 10 scones with this. 2 from the left overs

For the egg wash, mix 1 egg yolk with a drop of buttermilk. Half/Half. Add a pinch of salt and sugar to this. Brush the tops of the scones with the egg wash then sprinkle them with a bit of cheddar cheese. Place the tray in the fridge while you preheat the oven to 200 C

Bake for 15 minutes. Enjoy 😉👌🏻
