Did you know that India too has some regional dishes that are actually Pastas!
Yes, you read right!
So I am sharing today only 3 Regional Indian Pasta Recipe from the many such pasta recipes that you can discover in the country.
These 3 Indian Pasta Recipes are Skyu from Laddakh, Dal ka Dulha form UP and Iddiapams for Kerala.
The definition of pasta says that it isd an Italian food made from flour, eggs and water, formed into different shapes, cooked, and usually served with a sauce.
These Pasta Recipes will make you realise that we have always been preparing pasta in different forms, albeit a vegetarian eggless version of the same!

Skyu
Preparation Time: 15 minutes
Cooking Time: 15 minutes
Serves: 3-4

Ingredients:
2 cups whole wheat flour
1 cup milk
Salt to taste
2 potatoes, diced
1 carrot, diced
½ cup peas, shelled
3 tomatoes, diced
2” ginger, sliced
2 onions, sliced
2 tbsp oil
2-3 green chilies
1 tsp red chili powder
Handful coriander leaves

Method:
Knead wheat flour along with water into a stiff dough.
Rest the dough for some time.
Roll dough into long thin tubes. Cut out marble sized pieces and press them with thumb to make a pasta shape as shown in the video.
Heat oil in a pan. Add the sliced onions and sauté till translucent pink.
Add the sliced ginger and saute till golden.
Add spices and then the diced tomato and other vegetables. Stir fry for a few minutes.
Once vegetables cook, add 1 cup water and bring to boil.
In boiling water release skyu pasta. Bring to boil again.
After boiling for 10 minutes, add milk. Boil mixture for a few minutes.
Serve creamy Skyu garnished with coriander leaves.



Iddiappam & Stew
Preparation Time: 15 minutes
Cooking Time: 15 minutes
Serves: 3-4

Ingredients:
For iddiappams:
1 cup rice flour
1 ½ cup water
½ tsp salt
1 tbsp oil
For the Stew:
2 cup rice flour
½ tsp salt
3 cup water, as required
1 tsp oil
for veg stew:
2 tbsp oil
4 pods cardamom
1 inch cinnamon
4 cloves
¼ tsp pepper
1 large onion, sliced
2 chilli, chopped
1 inch ginger, chopped
3 clove garlic, chopped
few curry leaves
1 carrot, chopped
1 potato, chopped
½ cup peas
6 beans, chopped
½ tsp salt
2 cup coconut milk, thin

Method:
For the iddiappam:
Bring the water to a boil. Add the salt, oil and then the rice flout. Mix well. Remove from heat and cover and rest till the mixture is cool enough to handle.
Grease your hands and knead the dough till smooth and pliable.
Fill the dough in a sev press and press out noodles over banana leaf squares or a greased plate.
Steam for 7-8 minutes. Serve hot with stew.
For the stew:
Heat 2 tbsp oil in a pan. Add the whole spices and allow to splutter.
Now add the sliced onions, chilli, ginger, 3 clove garlic and few curry leaves.
Sauté until the onions are translucent pink.
Add the diced carrot, potato, peas, beans and salt.
Sauté for 2 minutes. Add 1 cup water, cover and cook till the vegetables are tender.
Add 2 cup of thin coconut milk and mix well. you can alternatively cook vegetables in water.
Add 1½ cup thick coconut milk and ½ tsp salt.
mix well and cook until the stew just comes to a boil. do not boil after adding coconut milk as the coconut milk may split.
Enjoy the vegetable stew and idiyappam.

Dal ka Dulha
Preparation Time: 15 minutes
Cooking Time: 15 minutes
Serves: 3-4

Ingredients:
1 cup arhar (toor) dal
½ tsp turmeric powder
Salt to taste
2 cups atta
½ tsp salt
1 tsp oil
2 tbsp oil
1 tsp cumin seeds
1 tsp chopped garlic
¼ tsp hing
2-3 whole red chilies

Method:
Wash the dal. Pressure cook the dal with 3 cups water, salt to taste, ½ tsp turmeric powder.
Knead the flour with ½ tsp salt, 1 tsp oil and sufficient water to make a stiff yet smooth dough.
Rest the dough for 20 minutes. Knead again for a minute.
Divide the dough into small balls. Roll out each ball like a poori.
Shape the pasta by pinching the opposite sides together, as shown in the video.
Add the prepared Dal ka dulha to the cooked dal and simmer for a few minutes till the Pasta is cooked well And firm 2 touch.
To prepare the tempering. Heat the oil in a pan and add the. Whole red chillies. And the human seeds and the garlic saute till the garlic is golden. And half teaspoon red chilli powder and immediately pour over the cooked Dal. Serve hot, garnished with coriander leaves.
