You HAVE to try these pineapple bowls with the griddle top chutney! This is one of my favorites to make on the Blackstone. You can make these with shrimp, fish, chicken, or the meat of your choice. I start by splitting open a fresh pineapple and removing the fruit, leaving a nice bowl for the finished meal. The Shrimp are seasoned with a jerk seasoning and olive oil but you can switch that out for blackening if you prefer. The chutney is really the star of the show that brings this dish to life and makes you feel like you're vacationing on an island. It's simple to make with some pepper, onion, pineapple, a pinch of sea salt, brown sugar, and a dash or red wine vinegar. Near the end I'll put the boil-in-a-bag rice on the Blackstone just to add some flavor. Throw it all in the bowl and get ready to impress your friends and family with this one!
