In this video, I go over the issues typically voiced about the Chemex, as well as how to fix them. Following that, I propose a recipe that will make you incredible coffee in larger batches with great extractions. Feel free to just use the recipe and skip the hacks OR just use the hacks and formulate your own recipe. This is another highly tweakable recipe, so feel free to divide your pours, increase the ratio, etc.
This brewer has (arguably rightly so) been on the receiving end of major criticism from the specialty coffee world. Perhaps this video will be the beginning of healing old wounds.
If you haven't, I implore you to check out my Pourover 101 video as I believe it will greatly elevate your understanding, and subsequent execution, of pourover coffee.

Recipe:
40g coffee at 900 microns, 650g water off the boil (lower temp with darker coffees)
0s- 100g bloom, swirl out clumps
30s- 100g second bloom, swirl out clumps
1m- 200g, soft swirl
2m- 150g, soft swirl (I forgot to swirl here in the video)
3m- 100g, soft swirl
TBT- 4:30-8ish. Don't worry about long brews, especially if they taste good!
