Today I set out to prepare some highly prized Pyrenean trout. I’m in the region known as the Bigorre, on the bank of the Gave de Gavarnie river which I follow from it’s mountain source above the Cirque de Gavarnie the spectacular mile-high cliff-face which the poet Victor Hugo described as an Impossible and extraordinary object, “a colosseum of nature. it cascades 413 meters down the wall and then flows northwards down the valley through the village of of Gèdre and on to the town of Argelès Gazost, though a wonderful fish farm where trout are bred in the natural waters of the river, so have all the flavour of the wild.

This delightfully straightforward recipe is a basic trout meuniere with the addition of sliced almonds.

2 trout
3 tablespoons of butter
1 tablespoon of oil
4 tablespoons slithered almonds
salt
flour
a lemon
chopped parsley
