For Paul Toussaint, cooking was not an easy path. After his family migrated from Haiti to Canada when he was just 7, left behind in his home country, he was forced to learn some important life skills at an early age. The most valuable one was cooking.

Becoming a chef wasn’t a career his family deemed worthy, so in college, he initially pursued law at his father’s request – but cooking always had his heart. So one day, he decided to follow it.

Now Toussaint is the head chef at Agrikol, one of Montreal’s most well-known Haitian restaurants co-owned by the Grammy Award-winning duo, Win and Regine Butler of Arcade Fire.

NBCLX storyteller @NgoziEkeledo traveled to Montreal to learn more about Toussaint’s incredible journey in the culinary industry and why the Haitian chef wants to give back to his home country and his roots.
