椰子流心紅豆月餅【中秋食譜】～ 簡易配搭爆漿流心餡| ASMR (Red Bean Mooncake with Lava Coconut Custard recipe) [Eng Sub]

中秋節當然不少得傳統月餅，所以今次會製作紅豆月餅。別看只是普通廣東月餅，中間還加添了流心椰子餡料，大熱的爆漿流心餡為月餅加添新意。而月餅無論熱食或凍食都有流心效果，鬆脆的牛油餅皮加上綿滑天然的紅豆沙餡料，還有香濃的爆漿椰子餡，無論味道或賣相都一樣吸引。大家都試試做這個椰子流心紅豆月餅來迎接中秋節吧!
The Mid-Autumn Festival is coming soon, so today recipe is traditional Red Bean Mooncake with Lava Coconut Custard. It is a fusion mooncake, which has the Chinese traditional red bean paste filling plus the lava coconut custard filling. The crunchy butter mooncake crust with smooth and natural red bean paste and fragrant coconut filling are attractive. Everyone try to make this mooncake to welcome the Mid-Autumn Festival!

低筋麵粉 145克
吉士粉 12克
無鹽牛油 80克
椰漿 25克
冰糖粉 25克
蛋液 10克
高筋麵粉(手粉) 適量

紅豆餡:
紅豆 200克
栗粉 20克
水 20克
無鹽牛油 50克
栗米油 50克
麥芽糖 40克
黑庶糖 40克

流心椰汁餡:
無鹽牛油 25克
栗米油25克
椰漿 60克
砂糖 25克
蛋液 10克
魚膠片 3克

25g Rock sugar powder
10g Egg

200g Red bean
20g Corn starch
10g Water
50g Unsalted butter
50g Flavourless oil
40g Maltose
40g Brown sugar

Coconut custard fillings:
25g Unsalted butter
25g Flavourless oil
60g Coconut milk
25g Sugar
10g Egg
3g Gelatin sheet
